Healthy Easter Bunny Snack Packs

At my son’s preschool each child has a “special day” two times a year. This past week it was my son’s turn to have his day. This privilege entails a parent spending the day in class and the child bringing a “special snack” to share with the class. Parents are encouraged to pack healthy snacks, which I’m not sure all parents abide by based on all of the children on the playground asking whether cookies were my son David’s special snack. Hmmm…  I guess healthy snacks and preschoolers who want to eat them don’t tend to go together.

That’s where some creativity comes into play to inspire children to try some healthier foods! David brought these Healthy Easter Bunny Snack Packs (my son helped think up the recipe name) to school that consisted of carrots, organic crackers, and cheese sticks. We had a lot of fun making them together. My son’s classmates enjoyed the carrot-shaped packaging and the fun of taking apart their snacks. There was one little girl who mentioned that she didn’t appreciate having carrots for a snack, but every party has its pooper, and we were able to talk about how vegetables are good for us. Overall, it was a big hit!

Healthy Easter Bunny Snack Packs

Serves: 4 snack packs

Prep Time: 20 minutes

Ingredients

  • Baby carrots
  • Annie’s Organic Cheddar Bunnies or a gluten-free alternative as needed
  • 4 cheddar cheese sticks
  • 8 snack-sized plastic bags
  • 4 large twist-tie bags
  • Green ribbon

Directions

1. Measure 1/3 C of Cheddar Bunnies and 1/3 C of carrot sticks into individual snack bags and then zip them up, squeezing any excess air out. I quartered my carrot sticks lengthwise to make them more manageable for small children. You’ll end up with 4 bags of carrots and 4 bags of bunnies.

2. Place a cheese stick and 1 bag each of Cheddar Bunnies and carrot sticks into each twist tie bag so that all of the food is filled into one of the corners. Tighten the bag around your snacks, squeezing out air so that the corner of the bag becomes the bottom of your carrot. Tie the top of the “carrot” with some green ribbon and trim any excess or uneven ribbon coming out of the top.
