I’m back with more veggies stuffed with gooey, cheesy, Italian goodness. Stuffing vegetables with Italian flavors and LOTS of cheese has to seriously be one of the best ways to get everyone excited about what’s for dinner. This recipe, much like my popular Eggplant Stuffed Shells, or my more recent Italian Stuffed Collard Greens, are all full of veggies (and cheese) and all huge hits!
In addition to making these Cheesy Stuffed Green Peppers with flavors that the whole family will love, today’s recipe has the craziness of the back-to-school season in mind. You know – homework, soccer games, music lessons, and a myriad of extra-curricular and social obligations that work against a home-cooked meal and quality family time around the dinner table. Fortunately, family dinners can be saved by having a freezer stockpiled with make-ahead dishes. These stuffed peppers can be made the day before, the morning of, or can be frozen for a month or two later. Home-cooked Tuesday night family dinner=SUCCESS!
