Every day I get my normally-bouncy kindergartener off the bus and all but drag him back to the house, where he strews his shoes and backpack by the front door before plopping on the couch in exhaustion. One would think that kindergarten was a high-stress form of employment. The truth is, his teacher and classroom are delightful.
That’s when the NEED for snack time comes into play. In fact, I can tell it’s a time that my son looks forward to. On most days, instead of throwing him some cheese crackers or pretzels, we sit down and enjoy a tasty snack together… After all, mommy’s 8 months pregnant and always ready for snack time, too! At first he’s quiet and focused on the task of eating, but he quickly perks up and transforms back into his bubbly, wiggly, five-year-old self. He relates stories of his day and all of the inherent adventures and drama that one can expect in a kindergarten classroom.
With September comes apple season, so apple-based snacks have been regularly making it into our after-school snack routine. A fun snack that my son and I have both come to love is Apple Slice Snack Sandwiches. I’ve come up with three recipes for noshing on. Pictured from left-to-right above, they are:
