Crock-Pot Vegetable Chili – This thick and naturally sweet and savory Crock-Pot vegetarian chili makes for some easy, healthy weeknight comfort food!
I don’t know about you, but crock-pot meals are a lifesaver in my home. When I anticipate a crazy work day, or a nutty day trip with the little one to the children’s museum, there’s nothing like coming home to an already-made dinner. That’s why I’m excited about my latest contributor post for Crock-Pot Vegetable Chili at Simple As That.
This is my go-to chili recipe that has butternut squash hidden in it to add an extra serving of vegetables plus a thick texture and a sweet flavor. If you’re dealing with picky eaters, they’ll never guess there’s squash in there! 😉 I also talk about ways to make this chili vegetarian or not, as well as how to adjust the heat based on the preferences of your family. So head over to Simple As That to check it out!
Speaking of chili, there’s nothing like fresh, warm cornbread to sop it up with. Be sure to check out my recipe for Skillet Honey Cornbread. It’s semi-homemade, making it quick and easy to whip up!
