Who wouldn’t want to start their day out right with dessert for breakfast? Even better, with ice cream for breakfast! I know my kids would be on board with this idea, but ice cream isn’t exactly a mom-approved breakfast option… Or is it?
For today’s recipe I made a Banana Split Breakfast Sundae Bowl. The secret to this breakfast treat is in the yogurt. I don’t know if you’ve ever tried whipped yogurt before, but it’s basically regular yogurt that’s been fluffed up until it’s light and airy. When whipped yogurt is frozen it magically transforms into an ice-cream-like consistency. This frozen, whipped yogurt has endless possibilities as a lightened up treat and as a healthy way to enjoy “ice cream” for breakfast.
One of my favorite ice cream treats is the classic banana split, which has some serious breakfast potential. In my Banana Split Breakfast Sundae Bowl I swapped strawberry and pineapple sauces for fresh fruit and I decided to substitute peanuts with granola. At the end of the day I decided that the whipped cream, maraschino cherries, and rainbow sprinkles just had to stay. But I think we can get away with this little indiscretion as this recipe has got it all; protein, whole grains, and fruit. This breakfast ice cream treat is SO mom approved! In fact, I think mama’s gonna go and make herself one right now! 😉
