This recipe was made with my fellow CSA members in mind. It’s seems that my CSA has had a recent over abundance of daikon radish. Daikon radish isn’t a common grocery store find, so it’s one of those CSA box items that can be a bit intimidating. Daikon is white in color, has a cylindrical shape, and looks much different than the little red radishes at the grocery store. It’s flavor is somewhat similar, but a little milder and sweeter than a red radish. For those readers who don’t care for the spiciness of red radish, you might find that daikon is more your speed. Also, if you don’t have access to daikon radishes, you can still make this recipe using regular red radishes and the salad will still be delicious!
This recipe for Spicy Tropical Radish Salad has a pop of heat and fruity flavor that will bring a tropical paradise to your kitchen!
Spicy Tropical Radish Salad
Serves: 4 Serving Size: 3/4 C
Prep Time: 15 minutes
Ingredients
Dressing
- 2 Tbsp lime juice
- 1 Tbsp honey
- 1/4 tsp dry ginger
- 1/8 tsp cayenne pepper (this is pretty spicy so half this if you don’t like a ton of heat)
- 1/8 tsp salt
Salad
- 1 C daikon match sticks
- 1 C cucumbers, sliced and halved
- 1 C mango, cubed
- 1/2 C pomegranate
- 1/4 C fresh cilantro, for garnish
- 2 tsp lime zest, for garnish
Directions
1. In a medium sized mixing bowl, whisk together your dressing ingredients and set aside.
2. Prep your salad ingredients, then stir it together with your dressing.
3. Allow the salad to sit for 15-30 minutes before serving. Garnish with fresh cilantro and lime zest.
*This recipe pairs well with white fish or chicken.
