How To Cut a Butternut Squash

cubed-butternutWhen I first started cooking with butternut squash, I was definitely deterred by the effort required for cutting the darn thing. The skin is impossible to peel, and you’ll easily break a sweat trying to cube it. That is, until I stumbled across this butternut cutting hack.

How To Cut a Butternut Squash

Ingredients and Tools

  • 1 butternut squash
  • cutting board
  •  vegetable peeler
  •  chef’s knife
  • tablespoon

Directions

1. Using the chef’s knife, place a few slits in the skin of the butternut squash, and then microwave on high for 3 minutes. This will slightly soften the squash and make it much easier to work with. butternut-peeler

2. Cut both ends off of the squash.

3. Place the butternut upright with the wide base facing down, and work the peeler from top to bottom, removing the skin. If you have ever peeled a butternut squash without microwaving it first, you will be able to accomplish this surprisingly easily.

4. Cut the base away from the neck of the squash and then cube to your desired size. Again, this is much easier after microwaving it first.

5. Cut the base of the squash in half width wise, scoop out the seeds with a tablespoon, and then cube. butternut-scooping-seeds

Your butternut squash is now ready for use with much less sweat and grumblings under your breath, so that the kids can’t hear what you’re saying. It’s good in a favorite recipe or oven-roasted with olive oil, salt, and pepper.
