Blueberry Lime Ricotta Toast – Start your day with an extra zing with this protein-packed ricotta toast recipe that will help you power through whatever awaits you!
This summer my boys are tiring me out! They’re SO active! I don’t understand it, how is it that they’re bouncing off of the walls from 8:00 am to 8:00 pm every day without a break?!
I’ll take them to the park or the pool (to tire them out, of course). We’ll get home and they’ll start climbing all over the furniture and wrestling by the china cabinet. It’s like they’re two little centrifugal forces that whirl through my home while leaving destruction in their path. I grew up in a home of all girls and I don’t remember any of us being that way. Those of you who have sons must know. Is this a boy thing?
On the weekends I work as a home care RN. I have to drive around visiting sick people and doing medical procedures all day. The funny thing is that during the weekends it kind of feels like a break. Somehow my home life is more exhausting than being a nurse!
All that to say, every morning, 7 days a week, I need to start my day out right with an energizing breakfast. I need something to power me through the madness my days so often hold!
One of my favorite ways to start my day out right is with a flavorful slice of ricotta toast and a cup of black coffee. A tasty combo I’ve come to love this summer is this Blueberry Lime Ricotta Toast.
A piece of whole grain toast with high-protein ricotta gives me the energy I need to power through my two cute little centrifuges. The blueberries and lime add that extra nutritious zing and I know I’ve got this! Toast up your own energizing breakfast by scrolling to the bottom of this post!
- 1 piece toast
- 3 oz ricotta cheese
- ⅓ C fresh blueberries, cut in half
- zest of half a lime
- 3 small lime wedges for garnish
- Toast 1 piece of bread.
- Measure the ricotta cheese into a ziplock bag. Clip one end of the ziplock bag and squeeze the ricotta onto your toast in a zigzag pattern as if using a frosting bag.
- Arrange the blueberries over the ricotta toast. Season with lime zest. Garnish with lime wedges as desired. Serve immediately.
