Pork Chops with Peach Salsa

As a total foodie, my favorite thing about the warmer weather is the advent of grilling season. In my home, grilling is a way of life in the summer. Living in a townhouse without a yard, my patio is my family’s oasis where we grow tomatoes, herbs, and flowers in pots. There’s just enough room for a table with an umbrella and chairs along with my son’s sandbox and a small kiddie pool. My husband and I spend many lazy afternoons and evenings under the shade of the umbrella, listening to chill music with a summer drink in hand, while we grill and my son has busy sand and water adventures. It’s summer bliss.

Peach Salsa

I’m kicking off the grilling season today with a recipe for Pork Chops with Peach Salsa. This is one that my whole family loves. After all, what kid is going to turn their nose up to the promise of sweet peaches for dinner? I think the best part of this recipe is that I create a brine for the chops with peach juice, salt and chipotle pepper (optional). Brining your chops is the secret to succulent and tender chops every time.     I love the combination of meat and fruit. We had chicken breast with strawberry salsa yesterday, mmmm! Your summer evenings on the patio sound so idyllic. 🙂
