Made in larger batches, some can be used immediately, and some can be frozen for later use. Pumpkin puree is best known for its use in pies, but is a healthy addition to soups and pasta recipes.

It is less commonly found at our local grocer, making it something special, although I would not be surprised or disappointed to continue to see this squash grow in popularity. It has a mild, sweet flavor, with a thin, edible skin. This recipe for my Tex Mex Stuffed Delicata Squash is husband and kid tested and approved.
